Where There’s Smoke, There’s Fire

The heart of coastal cooking, ignited. Here, wild BC salmon is fire-roasted over an open flame, kissed by smoke and flame in a nod to traditional West Coast techniques. The crackle of burning wood, the aroma of cedar and salt, and the sight of salmon caramelizing over live fire—it’s a sensory experience that connects you directly to the land, the ocean, and the legacy of this region’s food culture.

Cold As Ice

An ocean bounty chilled to perfection and served with a side of connection. This eat-and-meet experience invites you to taste the freshest seafood from right here on Vancouver Island while mingling with our passionate local partners who make it all possible. Dive into freshly shucked Fanny Bay oysters, Sterling Seafood’s albacore tuna and spot prawns, Salt Spring Island mussels, and more. Set on ice, paired with zesty mignonettes and seasonal garnishes—this is the ocean, on the rocks.

A Day At The Beach

Get your hands messy and your heart full with a Rathtrevor West Coast Seafood Boil—our elevated take on the coastal classic. Brimming with local clams, Salt Spring Island mussels, spot prawns, Dungeness crab, potatoes, and corn on the cob, all simmered in a fragrant white wine and kelp broth. Served beachside, it’s rustic, rich, and ridiculously good. A nod to timeless beach gatherings, this is coastal comfort food at its most satisfying.

Keep It 'Mallow

There’s no better way to close the evening than fireside with something sweet. At this nostalgic station, guests are invited to roast house made marshmallows over an open flame, then craft the ultimate s’more with dark chocolate and golden graham crackers. Imagine the sun dipping low, the crackle of firewood, and the smell of toasted sugar in the air. Press that marshmallow between chocolate and graham, let it ooze just enough, and take that first, glorious bite—because some memories taste better with a little char
